Lemony Chicken and Chickpea Bowls

Lemony Chicken and Chickpea Bowls

A good weeknight bowl needs more than a pile of ingredients: it needs something bright, something savory, and a clear path to dinner. These lemony chicken and chickpea bowls take about 35 minutes, serve four, and roast on one sheet pan while you cook the rice.

Why This Bowl Works

Chicken, chickpeas, red onion, and cherry tomatoes share the same pan, so their flavors mingle as the tomatoes soften and the chickpeas turn golden at the edges. A quick lemon-yogurt sauce brings coolness to the warm spices and makes the bowl feel complete.

Gather Your Ingredients

For four servings, set out 1¼ pounds boneless, skinless chicken thighs, 1 drained 15-ounce can of chickpeas, 1 pint cherry tomatoes, and 1 small red onion cut into wedges. You’ll also need 1 tablespoon olive oil, 1 teaspoon smoked paprika, ½ teaspoon ground cumin, salt, pepper, 1 lemon, ½ cup plain Greek yogurt, and 3 cups cooked rice.

Roast, Sauce, and Serve

Heat the oven to 425°F and line a rimmed sheet pan with parchment. Cut the chicken into bite-size pieces, then toss it on the pan with the chickpeas, tomatoes, onion, olive oil, paprika, cumin, ½ teaspoon salt, and a few grinds of pepper.

Spread everything into a single layer and roast for 18 to 22 minutes, stirring once, until the chicken reaches 165°F and the tomatoes have burst. While it cooks, stir the zest and juice of half the lemon into the yogurt with a pinch of salt; serve over rice with the sauce and remaining lemon cut into wedges.
