Berry Banana Baked Oatmeal for Busy Mornings

Berry Banana Baked Oatmeal for Busy Mornings

Some mornings call for breakfast that’s already waiting in the fridge. This berry banana baked oatmeal takes about 45 minutes from start to finish, makes six servings, and reheats well for a warm, fruit-filled start to the day.

A Make-Ahead Favorite

Mashed banana adds sweetness and helps hold the oats together, while berries bring little bursts of tart flavor through the soft middle. The edges bake up golden, so each square has a bit of contrast rather than the texture of a bowl of oatmeal.

What You’ll Need

For six servings, gather 2 cups old-fashioned rolled oats, 1 teaspoon baking powder, ½ teaspoon cinnamon, and a pinch of salt. Add 1 ripe banana, 1½ cups milk, 1 egg, 2 tablespoons maple syrup, 1 teaspoon vanilla extract, 1 cup berries, and a little oil or butter to grease an 8-inch square baking dish.

Mix and Bake

Heat the oven to 375°F and lightly grease the baking dish. In a bowl, mash the banana, then whisk in the milk, egg, maple syrup, and vanilla; stir in the oats, baking powder, cinnamon, and salt until evenly combined.

Fold in the berries, pour the mixture into the dish, and bake for 30 to 35 minutes, until the center is set and the top is lightly golden. Let it rest for 10 minutes before slicing; refrigerate leftovers in a covered container and reheat a square with a splash of milk if you like it softer.
